此项为期7周的研究共纳入39例健康消瘦受试者，并通过进食约三个松饼的方式使受试者每日额外摄入750 kcal。除脂肪类型不同之外，松饼的制备方法均相同。19例受试者的进食的松饼由来自于葵花籽油的PUFA制成，其余20例受试者进食的松饼则富含来自于棕榈油的SFA。

结果显示，两组受试者的体重均增加2.2%(约1.5kg)。PUFA和SFA组在体重增加方面无显著差异，但在总胆固醇/HDL胆固醇、LDL/HDL胆固醇以及载脂蛋白B(apoB)/载脂蛋白A1(apoA1)方面两组存在显著差异。在摄食过度期间，PUFA组的上述比值分别比SFA组降低13%、19和16%。PUFA组的非HDL胆固醇呈降低趋势。两组受试者的空腹胰岛素、胰岛素原和胰岛素抵抗均升高。
